The idea of quick and easy appetizers came to me after friends of ours dropped in unexpectedly from out of town, and I was scrambling to find something to serve them.

With some luncheon meat, cheese and hummus, I was able to fashion a food plate that satisfied their hunger until the takeout arrived.

I vowed to have a few simple recipes on hand so I would always have something to serve unforeseen friends or family who drop in.
