I started to substitute mousse as my dessert of choice over cake and pie when my husband commented on a heavy pasta meal I had prepared.

He said that he didn't want the apple pie I had just taken out of the oven because it would be like having a thick piece of sweet dough on top of the stomach full of noodles he was digesting.

I decided to experiment with lighter desserts like puddings, mousses and frozen treats.

This book is the result of the many mousse recipes I tried and thoroughly enjoyed.

The one thing I enjoy about mousse is how decorative you can be when serving it.

As you will see in some of the entries in this book, I have presented the mousse in a coconut shell, a small beer glass with a handle and in a bowl garnished with thick melted chocolate.

I urge you to get creative, even if it is just a piece of fruit on top, to make your dessert memorable as well as delectable.
