This is an inspiring cookbook if you want to eat more meatless or almost vegetarian dinners. I've liked pretty much every recipe I've tried. Many of the recipes are simple enough for weeknight cooking. Favorites so far have been the Carolina Vegetable Soup (the secret ingredient is barbecue sauce) and the Salmon Cakes.
